Ingredients
- 1/2 c (1 stick) unsalted butter, at room temp, plus more for the baking dish
- 1/2 c raspberry jam
- 1/2 c fresh raspberries, mashed
- 1-3/4 c flour, spooned and leveled
- 1/2 t salt
- 1/2 t baking powder
- 3/4 c sugar
- 1 large egg
- 1 t vanilla
- 1 c creamy peanut butter
- 1/2 chopped salted, roasted peanuts

Step 1
Heat oven to 350. Butter 8" square baking dish. Line with parchment paper.
Combine jam and berries in a small bowl. In separate bowl, whisk together flour, salt and baking powder.
Beat butter and sugar with mixer on med-high until light and fluffy, 2-3 mins. Add egg and vanilla and beat until combined. Add peanut butter and beat until combined.
Gradually add flour mixture, mixing on low until just combined. Press half the dough into prepared dish. Top with raspberry mixture. Fold peanuts into the remaining half of dough and drop in clumps over jam. Bake until top is golden brown, 35-40 mins.
Cool in dish for 30 mins, then transfer to wire rack to cool completely. Cut in to 16 squares.
