Ingredients
- chocolate crust
- 2/3 cup sugar
- 1/4 cup corn starch
- 1/2 tsp salt
- 4 egg yolks
- 3 cups whole milk
- 5 oz bittersweet chocolate (not unsweetened), melted
- 2 oz unsweetened chocolate, melted
- 2 TBS unsalted butter
- 1 tsp vanilla

Step 1
Turn oven on to 350 degrees.
Whisk together sugar, cornstarch, salt and yolks in a pot until combined well, then add milk in a stream, whisking. Bring to boil over moderate heat, whisking, then reduce heat to simmer. Whisk 1 minute as filling thickens.
Push filling through seive into a bowl, then whisk in chocolates, butter and vanila. Cover surface with buttered round of wax paper and cool for at least 2 hours.
Spoon into crust and chill, loosely covered, at least 6 hours.
