Ingredients

  • 3/4 lb. boneless skinless turkey fillets or slices or 2 cups cooked turkey
  • 2 teaspoons olive oil divided
  • 1/2 medium onion chopped (1 cup)
  • 1/2 lb. button mushrooms
  • 3/4 cup chicken stock
  • 2 tablespoons tomato paste
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • Salt and freshly ground pepper to taste
  • 1 tablespoon sour cream
  • 2 tablespoons chopped fresh parsley

Step 1

If using uncooked turkey, slice turkey into 1/4" strips, heat 1 teaspoon oil in skillet and brown turkey. Remove to plate and sprinkle with a little salt and pepper. Add second teaspoon oil and onion to skillet. Saute 5 minutes. Add mushrooms and continue to saute for 5 minutes. Pour in stock. Add tomato paste, mustard, Worcestershire sauce, salt and pepper to taste. Mix thoroughly. simmer 5 minutes. Taste. Serve over egg noodles.
