Preparation

Step 1

prepare your chicken by rinsing the chicken breasts off and then salting them with seasoning salt. Place the chicken in a Pyrex bakning dish and put in the microwave for about 10 to 13 minutes, depending on the size of the breasts. Once they are cooked take them out of the liquid that has accumulated in the dish and let cool. Once they have cooled, chop up.

Crush one roll of Ritz Crakers, not too fine, and place them in the bottomm of the 13x9 inch dish, you will use the other 1/2 roll for the topping. Once you have spread the crakers in the bottom of the dish, pour the melted stick of butter over the crakers, making sure you cover all the crakers as evely as you can.

now, mix up the two cans of soup and the sour cream and then add the poppy seed and chopped chicken and pour over the Ritz Craker crust. This mixture will be quite thick so I would suggest that you cpoon large blobs around the pan, so it is a little easier to spread without pulling up the crust. Last of all, put the remaining crushed Ritz crakers over the soup mixture.

Cook at 350 degrees until it starts bubbling.
Great to freeze and cook later.
