Ingredients
- 2/3 cup thyme leaves
- 2/3 cup rosemary leaves
- 1/2 cup sage leaves
- 12 cloves garlic
- 2 jalapeno chiles, seeded and chopped
- 1 cup olive oil
- 6 lb skirt steak or filet of beef trimmed
- Salt and pepper to taste

Preparation
Step 1
In a food processor or bowl, chop herbs, garlic and jalapeno. With machine running, pour in oil. Slice steak into thirds, spread herb mixture on both sides. Cover with plastic wrap, refrigerate 3-4 hours.
Heat grill or broiler. Season steak with salt and pepper, place on grill or broiler pan.
Cook 5" from heat, turning once, 5-7 minutes per side for medium rare. Let steak rest 5 minutes before slicing. slice against the grain.
