Ingredients
- 1 tablespoon butter, or oil
- 1 cup chopped onion
- 1 tablespoon minced ginger
- 3/4 teaspoon salt
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric
- 2 teaspoons coriander
- 1 teaspoon fennel seeds, ground
- water, as needed
- 2 carrots, peeled and diced
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1/2 cup raisins
- 6 cups cooked basmati rice
- 1 cup nuts, toasted and chopped
- 1 cup unsweetened coconut meat, lightly toasted

Preparation
Step 1
1. Heat butter or oil in a large deep skillet. Add onion, ginger, salt and spices. Saute 5-8 mins, adding water as needed to prevent sticking.
2. Add carrots and garlic; stir and cover. Cook 5 mins, until carrots begin to get tender.
3. Stir in pepper, cover and cook 5 mins longer. Add raisins and rice, mix well. Cook and stir just a few minutes longer. Serve topped with coconut and nuts.
Notes: This was EXCELLENT!
My subs: kept amounts of everything the same except for using only half the amount of rice. Would definitely do that again. Used black mustard seeds, golden raisins, brown basmati rice. Left out the coconut and nuts - would probably be good, but weren't missed.
