Cinnamon Rolls II
By JenHall
Can be made the night before & baked in the morning. They are very moist & decadently rich. Made these for Christmas morning - they were so good!! They were well worth the work. The dough was a bit sticky when we started kneading but it was great fun. Luckily we had someone else in the house to help us out with additional flour or we might still be stuck to the dough!! I just had a leftover for breakfast the day after Christmas & they are still yummy!!
I usually stay away from bread recipes that call for yeast since I am not a baker but I'm glad I decided to make these. If I can do it, anyone can!!

Preparation
Step 1
1) Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in the butter; stir until melted. Add water and let cool until lukewarm.
2) In a large bowl, combine the milk mixture, yeast, white sugar, salt, eggs and 1 cup flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, let rest 10 minutes. Turn the dough out onto a lightly floured surface & knead until smooth and elastic, about 8 minutes. Cover a let rise for 2 hours.
3) Roll dough out into a 12 x 9 inch rectangle. In a bowl, stir together the cinnamon & brown sugar. Spread the dough with the butter then sprinkle on the cinnamon, brown sugar mixture. Roll up the dough using a little water to seal the seam.
4) Cut the roll into 12 slices using dental floss. Place rolls onto a 9 x 13 inch greased baking pan. Cover with plastic wrap and put into the refrigerator overnight.
5) Take the rolls out of the oven & let rest at room temperature for 2 hours.
6) Variation - in a review of this recipe, a person mixed 1 teaspoon cinnamon & 1 cup dark brown sugar with enough melted butter to make a paste & put on top of the rolls right before baking.
7) Preheat oven to 375 degrees F and bake for 20 to 25 minutes until golden brown.
8) To make frosting; combine confectioner's sugar, cream cheese, butter & vanilla
