Ingredients

  • 6 T. + 1 t. lemon juice
  • 6 T. honey
  • pinch sea salt
  • 1 t. lemon zest
  • 1 egg + 2 egg yolks
  • 1 1/2 c. oat flour (I just grind GF oats into flour)
  • 2 t. natural granulated sugar
  • 1/2 t. sea salt
  • 1/4 c. olive oil
  • 4-5 T. cold water, as needed
  • 5 c. apples (about 3-4 apples), peeled and sliced
  • 1 T. lemon juice
  • 1 T. maple syrup
  • 3/4 c. oat flour (I grind Country Choice Organic Oats into flour)
  • 1/2 c. quick oats (I use Country Choice Organic Oats)
  • 2 T. oat bran
  • 1 t. cinnamon
  • 1/4 t. nutmeg
  • 1/4 t. sea salt
  • 3 T. coconut sugar (or another natural granulated sugar)
  • 4 T. softened coconut oil

Place a small saucepan over medium low heat.
Add the lemon juice, honey, and salt to the saucepan.
Whisk to combine and heat just until warmed.
In a separate bowl, lightly beat the egg and egg yolks.
Remove the honey/lemon juice mixture from the heat, and slowly add about ¼-1/2 of it into the egg mix, all while constantly whisking. This is called tempering, where you're slowly warming the eggs, so as to not scramble them.
Once the egg mix is tempered, place the pan back onto the heat and whisk the tempered egg mix back into the pan with the remaining honey/lemon juice mixture.
Bring the heat up to medium and stir the mixture.
Continue to stir the curd constantly for 5-8 minutes, until it is thickened and bubbly.
Remove the pan from the heat and cool a bit.
Pour the curd into a container and chill it for 2-3 hours until it is cold and thick.
Use as desired!

Mix the flour, sugar, and salt together in a large bowl.
Stir in the olive oil until the 'batter' is crumbly.
Add in the cold water as needed until the dough is moistened, but not sticky.
Press the dough into a pie plate, pressing it up the sides as desired.
Add your filling and bake according to pie directions.
To pre-bake the crust, preheat the oven to 375 degrees and bake for 10-12 minutes.

Preheat the oven to 375 degrees.
Butter or oil an 8 x 8 baking dish.
In a large bowl, toss the apple slices with the lemon juice and maple syrup.
Spread the apple slice on the bottom of the baking dish.
In another bowl, mix the ingredients for the crumble (flour, oats, bran, cinnamon, nutmeg, salt, and sugar).
Using a fork or your hands, cut the coconut oil into the dry crumble until the mix is moistened throughout.
Spread the crumble atop the apples.
Bake the crumble for 35 minutes.
Cool 20-30 minutes to allow the apple juices to thicken.
Cut and serve!
