Gooey Butter Bars

Ingredients
- 1-1/2 c flour
- 1/4 c sugar
- 1/2 c butter
- 2/3 c butter softened
- 1-1/4 c sugar
- 1/4 c light corn syrup
- 1 egg
- 1/2 t almond extract
- 1 c flour
- 2/3 c half and half
- 3 c sliced and/or halved fresh strawberries
- 2 T honey
- 1 t grated ginger

Step 1
Preheat oven to 350. Line 9x13" pan with parchment, set aside. For crust, in med bowl, combine the 1-1/2 c flour and 1/4 c sugar. Using a pastry blender, cut in the 1/2 c butter until mixture resembles fine crumbs. Pat into prepared pan; set aside.
In large bowl, beat softened butter with an electric mixer on med-high for 30 secs. Gradually beat in 1-1/4 c sugar. Beat in corn syrup, egg and almond extract just until combined. Alternately add flour and half and half, beating after each addition just until combined (batter may appear slightly curdled). Gently spread into crust-lined baking pan. Bake about 30 mins or until center is set. Cool in pan on wire rack. Use parchment to lift from pan; cut into bars.
In small bowl, toss strawberries with honey and ginger. Spoon over bars before serving.
