Using a slow cooker keeps this recipe super-simple; just throw in diced tomatoes, beef broth, diced pepperoni, sliced fresh mushrooms, green pepper, onion and seasoning and youre done. Its so tasty, youll never miss the crust!

Ingredients
- 2 can(s) (14 1/2 oz each) diced tomatoes with roasted garlic, not drained
- 1 can(s) (14 1/2 oz) fat-free & lower sodium beef broth
- 8 ounce(s) pepperoni sausage, diced
- 1.5 cup(s) sliced fresh mushrooms
- 1 large green pepper, diced
- 1 large red onion, chopped
- 1 cup(s) water
- 1 tablespoon(s) dried Italian seasoning
- 1 cup(s) shredded part-skim mozzarella cheese

Step 1
Have ready a 3-qt or larger slow-cooker.
Put all ingredients except mozzarella in cooker. Stir to mix well.
Cover and cook on low 6 to 8 hours or until vegetables are tender.
