Step 1

Cut 1 1/4 lb chicken breats ito 1/2 inch clices. Combine these with 1/2 c low fat buttermilk. Cover and chill for 15 minutes. Coat two baking sheets with cooking spray. Crush4 c while grain corn ceral such as corn chex or corn flakes. Transfer these to shallow dish and season with salt and pepper. Coat chicken pieces and put on baking sheets. Bake in a preheated 400 degree oven for about 8 minutes. Let chicken cool as they will become crispier. Can servie with honey mustard which is a mixutre of 1/3 c dijon mustard, 2 tsp mayo and 2 tbsp honey. WE TRIED THI 8/12 AND THE KIDS LOVED THEM. EASY TO MAKE. DID TAKE MORE THAN 8 MINUTES TO COOK THROUGH THOUGH.
