Ingredients

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 2 cups shredded zucchini
  • 1 -8 oz. can crushed pineapple
  • 1/2 cup Semi Sweet Choc Chips
  • 1/2 cup chopped Pecans
  • 3 cups flour, unsifted
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg

Preparation

Step 1

Beat 3 eggs to blend. Add vegetable oil, sugar, and vanilla. Beat until thick and foamy. Stir in shredded zucchini and pineapple, chocolate chips and pecans. Set aside.

Combine flour, baking soda, baking powder, cinnamon, nutmeg. Stir gently into mixture until just blended.

Pour into 2 greased bread pans and bake at 350°F until done. Use the toothpick test.
