Ingredients

  • 2 tbsp butter
  • 3 boneless chicken breasts
  • 10 oz frozen spinach thawed
  • 2 tbsp minced garlic
  • 1/4 c cream
  • 1/4 parm cheese
  • Salt, pepper, onion powder

Step 1

1. Season chicken with Salt, pepper, onion powder. Heat 1tbsp butter in a large skillet over medium heat. Brown the chicken 1-2min per side, but do not cook all the way through. Remove the chicken to a plate.

2. Add tbsp. butter to skillet over medium low heat. Add the spinach and garlic. Cook about 1 min. Stir in the cream and cheese. Adjust the seasoning with salt and pepper as needed, and then spread the spinach evenly over the bottom of the skillet.

3. Top the spinach with the chicken in a single layer, cover the pan and simmer over low heat about 5 min or just until the chicken is done
