Paleo Chewy Ginger Molasses Cookies

Ingredients
- 1 cup almond butter
- 3 Tbsp unsulphured molasses
- 2 large eggs, room temperature
- 2 tsp fresh grated ginger root OR 1 1/2 tsp ground ginger
- 3/4 cup coconut sugar
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/2 tsp ground ginger
- 3/4 tsp ground cinnamon
- 1/4 tsp ground allspice
- 1/2 tsp sea salt

Step 1
1. Preheat oven to 350 degrees. Line two cookie sheets with parchment paper or grease cookie sheets well.
2. In the bowl of a stand mixer, with a paddle attachment, beat together the almond butter, molasses, eggs and freshly grated ginger, until smooth.
3. In a medium bowl, sift together the coconut sugar, coconut flour, baking soda, ginger, cinnamon, allspice and salt.
4. Slowly add the sugar and spice mixture to the almond butter mixture, while mixing on low until just combined.
5. Drop the dough in rounded Tablespoonfuls, about 2 inches apart on the cookie sheet.
6. Bake cookies, rotating cookie sheets halfway through the bake time, until firm around the edges and cracking in the center. Bake for 15 total minutes, rotating sheets at 7 1/2 minutes. Cool for two minutes on the baking sheets and then transfer the parchment paper with cookies on it to wire racks to completely cool.
