Ingredients
- Enchilada Sauce Ingredients
- (Recipe adapted from AllRecipes.com)
- 4 tbsp. olive oil
- 4 tbsp. whole wheat pastry flour
- 8 tbsp. chili powder
- 2 (15 oz.) can clean tomato sauce
- 4 cups water
- 1/2 tsp. ground cumin
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- NOTE: The sauce will thicken just slightly when baking. If you want a runnier sauce, add more water before pouring over the enchiladas.
- Enchilada Ingredients

- 5-6 large, boneless, skinless chicken breasts, baked
