Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 tablespoon lemon juice
- 2 teaspoons vanilla extract
- 1 3/4 cups all-purpose flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- l cup flaked coconut, finely chopped
- 6 tablespoons colored sugar

Step 1
1. In a small bowl, cream butter and sugar until light and fluffy. Beat in the egg, lemon juice and vanilla. Combine the
flour, salt and baking soda; gradually add to creamed mixture and mix well. Beat in coconut.
2, Shape into two 6-in. logs; roll each in
colored sugar and wrap in plastic wrap.
Refrigerate for 3 hours or until firm.
3. Unwrap and cut into 1/4-in. slices.
Place 1 in. apart on ungreased baking
sheets. Bake at 375° for 10-12 minutes
or until set. Cool for 2 minutes before
removing from pans to wire racks.
