Ingredients

  • 2 cups peanut butter
  • 1/4 cup margarine -- room temperature
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 2 to 2 1/2 cups confectioners sugar
  • 9 ounces semisweet chocolate -- coarsely chopped
  • 2 Tablespoons shortening

Step 1

Place peanut butter, margarine and salt in a bowl and microwave for about 1 minute or until soft (check and stir the ingredients every 20 seconds). Stir in the vanilla and confectioners sugar and mix until it has the consistency of a dough. Add more sugar if necessary.

Make 1 inch balls and refrigerate for about 1 hour until firm.

Melt the chocolate and shortening over low heat in a saucepan. Dip the balls into chocolate and refrigerate until the chocolate has set. Store in refrigerator or freezer.
