Ingredients

  • 1 small zucchini -- cut into 1/4 inch pieces
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 egg
  • 1 cup milk or soy milk
  • 1 Tablespoon oil
  • 1/2 teaspoon salt
  • 2 cups cornbread mix
  • 2 Tablespoons flour

Step 1

Place zucchini in a 2 cup measuring cup. Break broccoli and cauliflower florets into small pieces. Add enough of each to make 2 cups with the zucchini. Microwave for 4 minutes, until soft.

In a medium bowl, whisk the egg, milk, oil and salt. Stir in the cornbread mix until a smooth batter forms.

Sprinkle the flour over the drained cooked vegetables. This will keep them from sinking to the bottom. Mix vegetables into the batter.

Heat oil in a large skillet. Drop batter into skillet and fry.
