- 3 whole eggs
- 1/3 cup sugar
- 1 pint heavy cream
- 1/4 teaspoon vanilla extract
- Crystal sugar for caramelizing

Step 1
Mix the yolks, whole eggs, and pumpkin meat with a hand whisk. Add the sugar, vanilla, and heavy cream. Mix gently until smooth with no lumps. Pour into 6- or B-ounce bouillon cups. Place the filled cups in 1/2 inch of water in an oven-safe casserole dish and cover with foil. Bake at 300 degrees for about 45 minutes. Cool.
