WHOOPIE PIES

I hear from the church bazzar ladies that these are the best Whoopie Pies in the STATE!!
NOTE: Most people don't have milk long enough for it to go sour. You can make sour milk by adding vinegar: reduce milk by 2TBS and add 2TBS vinegar. The vinegar will curdle the milk and that is sour milk. IF YOU CUT THE RECIPE IN HALF, USE ONLY 1TBS VINEGAR TO SOUR THE MILK!!

Ingredients
- RECIPE MAY BE CUT IN HALF AS IT MAKES A LARGE AMOUNT OF WHOOPIE PIES
- 1 cup shortening
- 2 cups granulated sugar
- 2 eggs
- 2 egg yolks (set aside whites for filling)
- 1 cup sour milk
- 1 cup hot water
- 2 tsp. baking soda
- 1 tsp. baking powder
- 4 cups flour
- 1 cup cocoa
- 1/2 tsp. salt

Preparation
Step 1
Combine baking soda, baking powder, flour, cocoa and salt. Set aside.
Cream together shortening and sugar. Add eggs. Mix together.
Add sour milk, water and dry ingredients alternately. Mix well.
Drop by Tablespoon onto lightly greased cookie sheets.
Bake at 400F for 5-10 minutes until top springs back when you press with your fingertips. DO NOT OVERBAKE!! OVERBAKING MAKES THEM DRY.
Cool. Spread filling (recipe follows - recipe allows for a generous amount of filling in each cookie)on half the cookies. Top with another cookie.
