Ingredients

  • Dressing:
  • 3 fresh apples
  • 1 container goat cheese crumbles
  • 1/2 cup golden raisins
  • 1/2 cup chopped almonds
  • 3 cups chicken breast, cooked, diced
  • 2 cups cooked red quinoa
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 cup jam of choice (ex: raspberry, fig, etc.)
  • 1 Tablespoon Xagave
  • 1 onion, diced, caramelized

Preparation

Step 1

Wash and dice apples (no need to peel or seed them). Place in a large bowl and add in the rest of the ingredients BUT the goat cheese. Toss with the dressing and then finish with the crumbled cheese.

Dressing:

In a sauté pan caramelize onion. Combine all of the ingredients.. To Caramelize an onion, slice really thin and in a sauté pan add 2 to3 tablespoons of oil and 2 tablespoons of sugar. Cook sugar in oil until it starts to brown and then add sliced onion and sauté until translucent.
