  • 2 (14 oz) cans of black beans, rinsed and drained
  • 2 (11 oz) cans shoepeg corn, rinsed and drained
  • 28 oz. Rotel chopped green chilies and tomatoes
  • garlic, chopped (to preference)
  • 1 medium chopped onion and some green onion
  • 1/2 cup fresh parsley, chopped
  • 1 cucumber, chopped (without the seeds)
  • jalapenos if preferred
  • 16 oz bottle of Italian dressing - Hosue Italian Dressing



Step 1

Mix all ingredients except Italian dressing. Pour Italian dressing over ixture until it covers the top of the mixture. You can use more if desired.l Refrigerate 2 hours. Stir well and serve with your favorite tortilla chips.
