Southwest Black Bean Soup

Ingredients
- 1/4 cup olive oil
- 1/2 lb smoked minced ham
- 3-4 onions, chopped
- 1 lb dried black beans (soaked overnight, drained, rinsed)
- 8-12 cups chicken broth
- 1/4 cup fresh parsley, minced
- 1-2 carrots, chopped
- 6-12 garlic cloves, minced
- 2-4 corn tortillas, torn up
- 2 cups dry red wine
- 1/2 tsp hot pepper sauce1 Tbsp ground cumin

Preparation
Step 1
In large pot saute: olive oil, ham, onions, parsley, carrots and garlic. Add soaked beans, broth, tortillas, wine and dry seasonings. Bring to a boil. Reduce heat and simmer until beans are tender (25 minutes). Pure soup and stire in 1-2 bunches minced silantro. Serve soup w/ choice of toppings: sour cream, cheese, alvacado, rice, onion, chilis, lemon.
