Ingredients

  • 1 cup all purpose flour
  • 2 tbsp sugar
  • 1 tsp baking pwoder
  • 1 /.2 tsp baking soda
  • 1/4 tsp kosher salt
  • 2/3 cup buttermilk
  • 1 large egg
  • 2 tbsp pure maple syrup, plus more for dipping
  • 2 tbslp unsalted butte,r melted
  • 1 very rip, large banana, mashed

Preparation

Step 1

Position a rack in the middle of the oven and preheat to 350. Generaously grease 24 mini muffin cups with nonstick cooking psray or grease with butter.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, stir together the buttermilk, egg, 2 tablespoons maple syrup, and the butter utnil just combined. Add the wet ingredients to the dry ingredients and stir until combined. Stir in the mashied banana.

Spoon the batter into the prepared muffin cups. Bake until the muffins are puffed and golden, 10-12 minute.s LEt the muffins cool slightly in the pan on a wire rack, then unmold onto the rack. Serve right away with maple syrup for dipping.
