Ingredients
- 2 tbsp olive oil
- 1/4 tsp cayenne pepper (more if you like it hotter)
- 3 shallots or 1/2 onion chopped
- 3 cloves garlic minced
- 1 28oz can tomatillos drained and cut up
- 1 14 1/2oz can diced tomatoes (no need to drain)
- 1 10 1/2oz can chicken broth
- 1 7oz can chopped green chilies
- 1/2 tsp crumbled dried oregano
- 1/2 tsp ground coriander
- 1 tsp ground cumin or more to taste
- 1 can black beans drained
- juice of 1 lime
- 1 rotisserie chicken shredded
- salt and pepper to taste
- secret ingredient - 1 pkt sazon goya (any flavor)

Preparation
Step 1
In a large skillet add the olive oil and add the onion or shallots and cook until softened. Then add the garlic until fragrant. Add the spices and sazon goya and mix to incorporate. Next add all of the remaining ingredients and simmer until warmed through to combine flavors.
I like to sprinkle chopped cilantro on my bowl then serve with sliced avocado and sour cream at the table. Enjoy with crumbled tortilla chips or crackers.
