Chocolate Peanut Butter Monkey Bars

Ingredients
- 1 cup old fashion rolled oats
- 1 cup water
- 4 eggs
- 1/2 cup honey
- 1 cup of coconut oil
- 8 oz melted semi sweet chocolate
- 1 cup peanut butter
- 1 ripened banana
- 1 cup chopped walnuts
- 1/2 cup chopped hazelnuts
- 1/4 cup sesame seeds
- 1 cup quick rolled oats
- 1 cup raisins

Preparation
Step 1
Soak 1 cup of rolled oats in 1 cup of water for 1 hour.
Prepare a 9 x 13 pan by lining it with parchment paper. Preheat oven to 350 F. In a mixing bowl, beat 4 eggs with 1/2 cup of honey until light and well combined. In a bowl melt the chocolate and coconut butter either in the microwave or in a metal bowl over a pot of hot water (preferred method). Once melted, add the peanut butter and mix until smooth. Mash the banana with a fork and add it to the egg mixture. Add the nuts, seeds, raisins, soaked rolled oats and quick rolled oats to the egg mixture. Stir with a wooden spoon until well combined. Add the chocolate and peanut butter mixture. Stir until mixed evenly throughout. Spread the protein bar batter into the pan and smooth it out with the spoon to make an even layer. Bake for 35 minutes.
Makes 40 bars ( 8 slices down the long side and each one of those cut into 5)
