Baked Eggs with Ham, Kale and Mushrooms

Ingredients
- 1 tablespoon olive oil
- 1/4 lb brown mushrooms, cleaned and sliced
- 1 small shallot, minced
- 10 kale leaves roughly chopped
- 4 ham slices
- 4 eggs
- 1/2 cup cheddar cheese, grated
- 4 tablespoons heavy cream
- maldon salt
- black pepper
- 3 green onions, minced

Step 1
Preheat the oven to 400.
Lightly oil 2 small (single serving) baking dishes. Place the dishes on a cookie sheet.
Fit two slices of ham into each dish, over lapping the sides somewhat.
Heat the olive oil in a large frying pan over medium heat. Add the onions and cook for 3 minutes, until soft, about 3 minutes.
Add the mushrooms, stir and cook for another 3 minutes.
Add the kale and cook until wilted, about 2 minutes.
Divide the mushroom mixture between the two dishes.
Sprinkle 1/4 cup of cheese into each dish.
Gently break 2 eggs into each dish.
Pour 2 tablespoons of cream over each egg.
Slide into the oven and bake for 15 - 20 minutes. Timing depends on how well you like your eggs cooked. We like the yolk runny, so I bake for 15 minutes.
Season with a little salt and pepper.
Garnish with the green onion.
