I made this for Christmas dinner & it was very yummy. The eggnog flavor was not overwhelming at all, just enough.

I did end up cooking it at 200 degrees F for 4 hours & 15 minutes then left in the oven for 3 more hours so it does tie up the oven for a long time but it sure seemed very rich so maybe the long cooking time had something to do with that?

This recipe did not call for prebaking the crust - I think maybe that would be a good idea. The crust seemed to be part of the cheesecake & didn't feel like a "crust". The recipe does say not to preheat the oven though so maybe bake the crust & let the oven cool?

I think when I make this again, I will look for another recipe & use for the crust then proceed as directed for the rest of this recipe.

All in all, very good & I thought very christmassy.

  • Crust
  • 1 cup graham cracker crumbs
  • 3 tablespoons white sugar
  • 3 tablespoons butter, melted
  • Cheesecake
  • 4 (8 oz.) packages cream cheese, softened
  • 1 cup white sugar
  • 3 tablespoons all-purpose flour
  • 4 eggs
  • 1 cup eggnog
  • 1 teaspoon vanilla extract

Preparation

Step 1

1) Lightly grease a 9-inch springform pan. Combine the graham cracker crumbs, 3 tablespoons white sugar, & butter in a bowl and mix until evenly moistened; press into bottom of the prepared pan.

2) Cream together the cream cheese & 1 cup sugar using an electric mixer. Add the flour and beat until smooth. Mix in the eggs with the mixer switched to low. Pour in the eggnog & vanilla; continue beating until just blended. Stop the mixer & scrape the bottom of the bowl occasionally. Pour the mixture over the crust.

3) Fill a shallow dish with some hot water and place on bottom rack of the oven. Put cheesecake on the middle rack of the oven. Turn oven heat to 200 degrees F. Do not preheat oven.

4) Bake the cheesecake until the center is set, about 3 hours, 15 minutes. Turn oven off. Allow cheesecake to cool in the oven, about 3 hours. Chill in the refrigerator overnight.

NOTE: according to some reviews, the cheesecake may take up to 4 hours, 15 minutes to set. The people reviewing did seem to think the low heat, long cooking time made the cheesecake very rich & creamy.
