- 2 1/2 cups sifted flour

- 1/3 cup butter
- 1 1/4 cups sugar
- 2 tbsp lemon zest, grated
- 2 eggs
- 1 cup milk
- 1/3 cup lemon juice

Step 1
1. Preheat oven to 325F. Sift together flour, baking powder, salt, set aside.
2. In bowl, cream butter with 1 cup sugar and 1 tbsp lemon zest. Add eggs one at a time, beating well after each addition. Add dry ingredients and milk alternately half at a time, stirring just until smooth.
3. Pour into a greased 9x5" loaf pan and smooth top. Bake 60-70 mins or until tester comes out clean.
4. Just before end of baking time, in a pan, mix lemon juice, remaining zest and 1/4 cup sugar. Heat slowly until sugar dissolves, stirring constantly. Pour evenly over bread immediately after taking it out of the oven. Cool in pan on rack for 30 mins. Carefully remove from pan and cool on rack for 2-4 hours more before slicing. Note: If you want a slightly tart taste, leave out a few tablespoons of sugar.
