Ingredients
- Marinade:
- 1 lb boneless, skin-on chicken thighs cut into 1-in pieces
- 1 cup potato starch
- 1/2 cup sesame seeds
- Oil for deep frying
- Lemon wedges for garnish
- 3 tbsp soy sauce
- 2 cloves garlic, grated
- 1 1/2 tbsp sugar
- 1 tbsp sake
- 1 tbsp rice vinegar
- 1 tbsp ginger juice

Step 1
Shake together marinade ingredients in a plastic bag until sugar is dissolved.
Add the chicken and toss until evenly coated.
Let marinate in refrigerator (tossing occasionally) 2 hours to overnight. Remove chicken and discard liquid.
Combine potato starch and sesame seeds.
Lightly coat chicken and let rest on a wire rack until dry, about 20 minutes.
Deep fry until pieces float to the top and turn deep golden brown.
