Ingredients
- CRUST:
- 1 1/2 cups fine, graham cracker crumbs
- 2 Tablespoons sugar
- 1/2 stick unsalted butter, melted and cooled
- FILLING:
- 20 oz. packaged cream cheese, softened
- 3/4 cups sugar
- 1 cup sour cream
- 3 Tablespoons flour
- 3 eggs
- 3/4 cups Key Lime juice
- 1 teaspoon vanilla extract

Step 1
Preheat oven to 375 degree.
CRUST:
Stir together the graham cracker crumbs and sugar. Add the butter, mix well and pat onto the bottom and sides of a buttered 9-inch spring-form pan. Tightly cover the bottom and sides of pan with aluminum foil. Bake crust for 8 minutes.
FILLING:
Beat cream cheese and sugar until smooth.
Beat in the sour cream, flour, add eggs one at a time, the Key Lime juice, and the vanilla.
Pour filling over the baked crust, and bake in a water bath pan for 15 minutes at 375 degrees. Reduce the temperature to 250 degrees, and bske for an additional 50-55 minutes, or until the center is barely set.
Chill for at least 4 hours before serving.
