Ingredients
- 1 cup sugar
- 1 tablespoon ground cinnamon
- 2 teaspoons ground nutmeg
- 1/2 teaspoon salt
- 2 egg whites -- at room temperature
- 3 tablespoons water
- 5 cups pecan halves

Preparation
Step 1
Combine sugar, spices, and salt; set aside.
Beat egg whites and water until foamy.
Gradually beat in sugar, one tablespoon at a time, until
stiff peaks form.
Fold in pecan halves. Pour pecans on a well-greased 15"x10"x1" jelly roll pan.
Bake at 300 for 30 minutes, stirring every 10 minutes.
Cool and store in air-tight container.
Makes 5 cups.
