Ingredients

  • 2 cloves garlic + 8 lg cloves garlic, peeled
  • 1/4 c red wine vinegar
  • 1/4 c balsamic vinegar
  • 1.5 t Dijon mustard
  • 1 t salt
  • 3/4 t freshly ground black pepper
  • 1.5 c + 1t EVOO
  • 1/4 c finely chopped shallots or red onion

Preparation

Step 1

1. Preheat oven to 350F.
2. Place 8 lg peeled garlic cloves on a doubled sheet of aluminum foil.
3. Drizzle w/1t EVOO & sprinkle with 1/4t salt.
4. Wrap garlic & bake until very soft, ~45 min; let cool.
6. In a food processor w/ metal blade attached, mince garlic.
7. Add roasted garlic & finely chop.
8. Add vinegars, mustard, salt, & pepper.
9. Process to combine.
10. With the motor running, slowly drizzle in oil until dressing is emulsified.
11. Taste, and add additional salt & pepper if necessary.
12. Pour into a bowl & stir in shallots.
13. Stir before using.
