Ingredients
- Crust:
- 20 oz flour
- 4 oz 10x sugar
- 18 oz butter, chunked
- 1 Tbs lemon zest
- Filling:
- 22 oz sugar
- 2 oz flour
- 3/4 tsp baking powder
- 10 eggs
- 1 1/2 Tbs lemon zest
- 1 1/2 cup lemon juice
Preparation
Step 1
1. For Crust: Mix flour, sugar and zest in food processor. Add butter and pulse until it resembles coarse meal. Press evenly in 1/2 sheet pan sprayed with nonstick cooking spray. Dock and bake at 350 for 10 min until just lightly browned. Cool.
2. For Filling: Whisk eggs, sugar and zest until smooth but not frothy. Stir in lemon juice. Combine flour and baking powder; sift and fold into wet ingredients making sure there are no lumps. Pour into crust.
3. Bake at 325, 20-25 min until set but not browned. Cool, chill and cut into 2 1/2 x 3" bars. Top with powdered sugar right before serving, if desired.
