Ingredients

  • 2 pkg dry yeast
  • 1 cup warm water
  • 1/2 cup Parmesan cheese -- grated
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 2 tablespoons olive oil
  • 1 egg -- at room temperature
  • 3 3/4 cups flour

Preparation

Step 1


Dissolve yeast in warm water.
Add 1/4 cup Parmesan cheese, sugar, salt, oil,egg, and 2 cups flour.
Beat until smooth.
Stir in remaining flour to make a soft dough.
Knead 6-8 minutes until smooth; place in greased bowl, cover, and let rise until doubled, about 1 hour.
Punch down, roll to 18x12 rectangle. Cut into 6 squares.
Top each with desired filling.
Fold to form trianges; seal.
Place on greased baking sheets. Cover; let rise until doubled, about 40-50 minutes.
Slash top of pockets.
ake at 350 for 20 minutes.
Serve warm.
Refrigerate any lefovers.

Chicken filling:
1/2 cup cream sauce
3/4 cup cooked chicken, shredded
1/3 cup chopped green chilies or bell peppers
1/2 cup grated cheese


Beef filling:
1/2 cup marinara sauce with garlic
3/4 cup ground beef, well browned
1/2 cup grated cheese
