Murbeteig for Plum Cake

Ingredients
- 4 cups flour
- 1 teaspoon baking powder
- 1 cup sugar
- 1 egg
- dash of salt
- 1 teaspoon vanilla
- 1 1/4 cups butter
- 3 lbs fresh blue plums -- pitted, halved
- 1 cup sugar for toppping

Preparation
Step 1
Put butter, sugar, vanilla, salt, baking powder, and egg in one bowl.
Mix until creamy.
Add flour.
Mix with hands to a heavy dough.
Grease a 9"x13" baking dish.
Squeeze dough evenly around the dish.
Cut plums and set plums standing up, one in front of the other until the pan is filled.
Pour 1/2 cup sugar over the top of the plums.
Bake at 350 for 45-60 minutes, or until the plums are juicy.
After taking out of the oven, again sprinkle with 1/2 cup sugar over the fruit.
Serve with whipping cream over the top.
Murbeteig for fresh strawberries, peaches, or pineapple
Follow directions for Murtebeig dough above. However, after dough is placed in baking dish, it is to be baked before adding the strawberries on top. After the dough has been baked,
place fresh fruit on top and add the following glaze to seal in the flavor:
3 cups water, 2 cups sugar, thickened with 2-3 teaspoons cornstarch dissoved in the water.
Cook mixture until a heavy, creamy glaze appears.
Pour over the fruit and serve with whipping cream.
