Ingredients
- 1/2 cup brown sugar -- packed
- 1 teaspoon lemon zest
- 1/8 teaspoon nutmeg
- 3 tablespoons butter -- melted
- 1 8 3/4 oz can pineapple tidbits, -- drained
- 8 maraschino cherries -- halved
- 2 cups flour
- 1/4 cup granulated sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon nutmeg
- 1 egg -- beaten
- 1 cup milk
- 3 tablespoons oil

Preparation
Step 1
Combine brown sugar, lemon zest, 1/8 teaspoon nutmeg, and the melted butter. Divide evenly into 16 greased 2 1/2" muffin cups.
Arrange a few pineapple tidbits and a cherry 1/2 in the bottom of each muffin cup.
Mix flour, granulated sugar, baking powder, salt, and 1/8 teaspoon nutmeg. Add egg, milk, and oil all at once.
Stir until just moistened. Spoon into muffin cups.
Bake at 400 for 20 minutes.
Invert on wire rack.
