Ingredients

  • 5 tsp. rosemary, finely chopped
  • 3 toes garlic, chopped
  • 1/2 tsp. salt
  • 3 T. lemon juice
  • 1 T. olive oil
  • 1 1/2 tsp. thyme
  • 1/2 tsp. oregano
  • 1/4 tsp. pepper
  • 3 potatoes, cut in wedges
  • 2 onions, cut in wedges
  • 8-10 pieces of chicken
  • 1 red bell pepper, cut
  • 1 zucchini, cut

Step 1

Combine rosemary, garlic, & salt. Stir in lemon juice, oil, thyme, oregano & pepper. Spray bottom of 13x9 roasting pan, & scatter potatoes & onions. Add chicken. Spoon 2 T. herb mixture over chicken & vegetables in the pan, toss, & place chicken on top of potatoes & onion. Bake 375 degrees for 45 minutes. Remove from oven, baste with juices. Scatter peppers, & zucchini around chicken, add remaining herb mixtures. Bake 30 minutes more.
