Ingredients
- 1 cup flour, plus 2 tablespoons
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 dash salt
- 1 tablespoon sugar, plus 1 1/2 tsp
- 2 tablespoons butter, chilled
- 1/2 cup buttermilk
- 2 tablespoons vegetable oil
- 1/4 cup dried currants
- 2 tablespoons egg substitute

Preparation
Step 1
1. Combine 1 cup flour, baking soda and powder, salt, and 1 1/2 tsp sugar. Cut in butter.
2. Combine buttermilk-currants. Blend into flour with a fork, just until blended.
3. Turn out onto floured surface and pat to 1/2" thickness. Cut into rounds and place on a sprayed baking sheet. Brush tops with egg, then sprinkle with sugar.
4. Bake at 400 for 12-15 minutes.
Notes: Surprisingly delicious! Very, very easy. Didn't taste exactly like a traditional scone - lighter - and we certainly didn't get 12 servings … 6 for smallish scones. Used half ww pastry flour and golden raisins instead of currants, added cinnamon. Also didn't need all of the egg. Finished all 6 in one day …
