Ingredients
- 1 c. granulated sugar
- 1 1/2 c. water
- 3 tbsp. cornstarch
- 1 lemon
- 2 egg yolks
- 2 egg whites
- 1/4 c. sugar
- cream of tarter

Preparation
Step 1
Boil the sugar, water and cornstarch until thick. Whisk constantly. Add juice and rind of lemon and then 2 egg yolks well beaten. Cool Slightly.
Pour into a baked crust.
Beat egg white and then add cream of tarter and sugar. Beat until firm.
Top the pie with this meringue and brown at 450F. Watch closely.
If you desire more meringue, for each additional egg white add 2 tbsp. sugar.
MAKE SURE THAT THE MERINGUE TOUCHES THE PIE CRUST EVERYWHERE AND THAT THERE IS NO FILLING SHOWING.
