Ingredients

  • 3 cups potatoes -- diced
  • 1/2 cup celery -- diced
  • 1/3 cup onion -- diced
  • 2 cups water
  • 2 chicken bouillon cubes
  • 1/2 teaspoon salt
  • 2 cups milk -- divided
  • 1 cup mushrooms -- sliced
  • 1 cup sour cream
  • 2 tablespoons flour
  • 1 slice bacon -- fried and crumbled

Preparation

Step 1

In a large saucepan, combine potatoes, celery, onion, water, boullion cubes, and salt.

Cover and cook until tender, about 20 minutes, being
careful not to overcook potatoes-they should not be mushy-just tender.

Add 1 cup milk and mushrooms. Heat.

In meduim bowl, mix sour cream, flour, and remaining 1 cup milk.

Gradually stir mixture into soup.

Cook over low heat, stirring constantly, until thickened.

Sprinkle bacon bits over soup before serving.
