Ingredients
- 2 pints strawberries, cleaned and sliced
- 2-3 tbs honey
- 2 cups cake flour
- 3/4 tsp salt
- 5 tsp baking powder
- 1/2 tsp cream of tartar
- 1 1/2 sticks butter, cold
- 1 egg , beaten
- 1/4 cup milk
- 1 cup heavy cream, whipped
Preparation
Step 1
1. Mix strawberries and honey, refrigerate
2. Preheat oven to 400
3. Sift together flour, salt, baking powder and cream of tartar. Cut into butter till mixture is crumbly
4. Beat egg and milk together and mix into flour mixture til ingredients just hold together. With Floured hands put dough on floured boardand knead gently a few times. Handle dough as litle as possible.
5.Pat out to 1/2" thickness, cut with a floured 2- 2 1/2" Cookie cutter to get 10 -12 biscuits.
6. PLace on parchment lined cookie sheets about 2 inches apart and bake 12-15 minutes or until barely brown
7.Cool on rack
8.Place half of the biscuits at the bottom of wide individual bowls, drizzle with heavy cream, 3-4 tbs strawberries, top with another biscuit. Add another 3 tbs of strawberries to top and drizzle with heavy cream
