Ingredients

  • 2 1/4 cups flour
  • 3/4 cup sugar
  • 1 cup eggnogg
  • 3 tablespoons vegetable oil
  • 2 tablespoons rum
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup finely chopped pecans
  • RUM GLAZE
  • 1/2 cup powdered sugar
  • 2 teaspoons eggnog
  • 1 teaspoon rum

Preparation

Step 1

Heat oven to 350. Grease bottom only of loaf pan.

Mix ingredients except nuts and rum glaze in large bowl. Beat 30 seconds. Stir in nuts. Pour into pan. Bake 45 to 50 minutes or until toothpick inserted into center comes out clean.

Cool 10 minutes. Remove from pan and place on cooling rack. Drizzle with rum glaze. Garnish with chopped pecans.
