This is absolutely the best Thai chicken curry in Houston. I used to eat this dish every chance I got. Also the older Bush's used to eat here for Thai cuisine. You may also substitute tofu, beef or shrimp for the chicken if you like.

Ingredients

  • 1 (4-ounce) boneless, skinless chicken breast
  • 1 tablespoon red chili paste
  • 1 cup coconut milk (or lite)
  • 1 medium red new potato, cleaned, large cubed and cooked
  • 1/2 cup each: fresh green beans, snow peas and pineapple
  • chunks
  • 1 tablespoon brown sugar
  • 1 tablespoon Thai fish sauce (nam pla) or to taste
  • 5 each: chopped fresh basil leaves and whole cherry tomatoes
  • 4 cups cooked white rice

Step 1

Clean chicken and pat dry with paper towel. Cut into bite-size pieces; set aside in cool place. In large nonstick
skillet over medium heat, cook chili paste and coconut milk 3 minutes, stirring with wooden spoon. Add potato, chicken and green beans; stir and cook 3 minutes. Add peas, pineapple,sugar, fish sauce, basil and tomatoes; stir and cook until chicken is done, about 5 minutes. Serve hot with rice.
