Ingredients

  • 20 ounces spinach
  • 1/4 cup chopped onion
  • 2 teaspoons light butter
  • 2 tablespoons flour
  • 2 cups half-and-half, fat free
  • 1/4 cup fat-free sour cream
  • nutmeg
  • salt and pepper

Preparation

Step 1

1. Cook spinach in skillet until wilted. Drain.

2. Saute onion in butter 3-5 mins. Add flour. Cook 1 min. Whisk in milk. Boil until thickened. Take off heat. Add sour cream. Pour over spinach. Toss and season. Can also save 1/4 cup sauce before mixing with rest with spinach.

3. Put spinach into casserole, top with rest of sauce, 1/4 cup parmesan. Bake at 375 8-10 mins.
