Ingredients

  • TOPPING:
  • 1 cup flour
  • 3/4 cup brown sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup graham crackers
  • 3/4 cup dates, cut up → Pecan halves if desired.
  • 1 cup milk
  • 1/3 cup oil
  • 1 tsp. rum favoring
  • 2 eggs
  • 1/2 chopped pecans
  • 1 pkg vanilla butter cream frosting mix
  • 1 cup whipping cream
  • 1/4 tsp. rum flavoring

Preparation

Step 1

In large bowl, combine flour, brown sugar, baking powder, salt, milk, oil, rum and eggs at lowest speed. Stir in graham cracker crumbs and pecans. Pour into a 9 in. square pan which is greased only on bottom.
Sprinkle with dates. Bake at 350 for 35-40 minutes until top springs back.
Serve warm and garnish with topping.

TOPPING
Combine frosting mix, whipping cream and rum. Beat until thick.
