Ingredients

  • Vanilla Wafers
  • 3/4 cup sugar, divided
  • 1/3 cup all-purpose flour
  • Dash salt
  • 3 eggs, separated
  • 2 cups milk
  • 1/2 tsp vanilla extract
  • 5 ripe bananas. sliced

Preparation

Step 1

Preheat oven to 350 degrees

1. Reserve 10 vanilla wafers for garnish
2. Mix 1/2 cupe sugar, flour, & salt in teflon skillet
3. Blend in 3 egg yolks & milk
4. Cook uncovered stirring constantly for 10 - 12
minutes or until thickened.
5. Remove from heat
6. Stir in vanilla
7. Spread small amount of custard on bottom of
1 1/2 quart casserole
8. Cover with a layer of wafers & a layer of sliced
bananas
9. Pour about 1/3 of custard over bananas
10. Continue to layer wafers, bananas & custard to
make 3 layers of each, ending with
custard
11. Beat egg whites until soft peaks form, gradually
adding remaining 1/4 cup sugar & beat
until stiff but not dry
12. Spoon on top of custard, spreading to cover
entire surface & sealing well to edges
13. Bake at 350 degrees for 15 - 20 minutes or
until browned
14. Garnish with remaining wafers
