You can use any dried chiles that you want to try different flavors. Make it first with the chiles that it calls for because this one is very good.

Ingredients

  • 1 1/2 oz dry chiles de arbol
  • 1 1/2 oz dry ancho chiles
  • 1 med white onion, chopped
  • 4 cloves garlic, peeled
  • 1 Tbsp kosher salt
  • 1/3 cup distilled white vinegar
  • 1 1/2 cup water

Preparation

Step 1

1. Toast the chiles in a dry, medium skillet, over High heat, turning often until fragrant, plus or minus 3 minutes. Remove and let cool slightly, then with gloved hands, remove the seeds and the stems.

2. Place chiles, onion, garlic, salt and 1 1/2 cups water in a medium saucepan. Bring to a boil. Reduce heat and simmer until very soft, 15-20 minutes.

3. Place ingredients in a blender or food processor and puree until smooth. Strain into a medium bowl and mix in the vinegar.
