Oatmeal Chia Breakfast Cookies

By

Oatmeal Chia Breakfast Cookies make a wonderful breakfast that is vegan, all natural and full of fiber. Most vegan breakfast cookies can get pretty dry once they have cooled down, but these remain moist, soft and chewy. The dough is very versatile, so if you prefer bigger cookies you can always use 2-3 tbsps. of dough.
