Ingredients
- 2 small zucchini
- 2 teaspoons salt
- 4 scallions, minced
- 1/4 cup parsley, chopped
- 1/4 cup dill, chopped
- 1 egg, beaten
- 3/4 cup Parmesan
- 1/4 cup flour
- olive oil for frying

Step 1
Grate zucchini into a colander in the sink; toss with salt and let sit 10 minutes. Squeeze out the liquid.
Mix with 4 the scallions, chopped parsley and dill, beaten egg, grated Parmesan and flour.
Pan-fry spoonfuls of the mixture in olive oil, flattening with a spatula, 3 to 4 minutes per side.
Drain on paper towels and season with salt.
